Koeningsberger Klopse with Spätzle

  • 250g flour
  • 2 eggs
  • tsp salt
  • enough water to mix

  1. Mix all the ingredients together in a large bowl and make sure there are no lumps.
  2. Meanwhile bring a pot of saled water to the boil.
  3. Using a Spätzle machine or a chopping board (see below) grate or press the mixture into the boiling water. Leave in the water until, like gnocchi the Spätzle float to the top of the water. Then scoop out with a slotted spoon and put them in a bowl of cold water for a few minutes before placing them in an oven dish.

You can serve them in a variety of ways. With a creamy mushroom sauce, fried in butter and then placed in the oven with cheese. Treat Spätzle like pasta and add any sauce you fancy.
